Tapioca starch is a popular ingredient in a number of gluten-free applications. It is similar to cassava flour as they are both produced from the cassava root, but tapioca starch is made from just the thick part of the root. Tapioca starch is frequently used as a replacement for wheat flour, but requires more additional thickeners or gums than cassava. |
